Ingredients
  

Main Ingredients

  • 1 pound ground beef (or turkey)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup beef broth
  • 1 cup water
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • Salt and pepper to taste

Optional Toppings

  • sour cream for creaminess
  • shredded cheese for added flavor
  • cilantro for garnish
  • avocado for creaminess

Instructions
 

Cooking

  • In a large pot over medium heat, brown the ground beef with chopped onion and bell pepper until fully cooked. Drain excess fat.
  • Add the taco seasoning and stir until well combined.
  • Pour in the diced tomatoes, black beans, kidney beans, corn, beef broth, and water.
  • Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  • Season with salt and pepper to taste.
  • Serve hot with your choice of toppings.

Notes

Consider adding a squeeze of lime juice for a zesty kick. Serve with tortilla chips or warm cornbread for a delightful crunch.
