Preparation

  • In a large bowl, combine the shredded chicken, corn, rice or quinoa, black beans, diced tomatoes, and avocado.
  • Drizzle with lime juice, and sprinkle with cilantro, salt, pepper, and chili powder if using.
  • Toss everything together until well combined.
  • Serve immediately or refrigerate for meal prep.

Notes

For an extra kick, top with jalapeƱos or serve with a dollop of sour cream. You can customize the bowl by adding different vegetables or proteins.
