  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese Divided; half for the soup and half for garnish.
  • 1/2 cup heavy cream
  • to taste Salt and pepper
  • to taste Fresh basil, for garnish

Instructions
 

Preparation

  • In a large pot, sauté the chopped onion and minced garlic over medium heat until softened.
  • Add the shredded chicken to the pot, stirring to combine with the onion and garlic.
  • Pour in the chicken broth, diced tomatoes, and Italian seasoning. Bring to a simmer.
  • Add the broken lasagna noodles and cook until tender, about 10-12 minutes.
  • Stir in the heavy cream, mozzarella, and half of the Parmesan cheese, cooking until melted and creamy.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh basil and the remaining Parmesan cheese.

Notes

For more flavor, add a splash of lemon juice before serving. Customize by adding veggies like spinach or mushrooms for extra nutrients. Serve with a side salad for a refreshing balance to the meal.
