  • 2 pieces limes, juiced

Preparation

  • In a large bowl, combine the diced cucumbers, sweet corn, bell pepper, red onion, and cilantro.
  • Squeeze the lime juice over the salad and mix well.
  • Season with salt and pepper to taste.
  • If desired, add diced avocado or jalapeño for extra flavor.
  • Toss gently to combine all ingredients.
  • Chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
  • Serve as a refreshing side dish or light snack.

Notes

Try adding a pinch of chili powder for a spicy kick. This salad is best enjoyed fresh and doesn’t freeze well due to the texture of the cucumbers. Keep in an airtight container in the refrigerator for up to 2 days.
